Even if you dont have to get them done to get the visa, it is worth getting as many as possible done before they come to the US. First off, Hep B is a 3-shot series, with the last one coming six months after. Second, you do not want to be held up getting the kids into school because of the medical form (we did b/c my son shows false positives for TB and had to have a chest xray). Third, it is heck of a lot cheaper, and will avoid arguments with HMOs and insurance.
FYI, many people have their health records in a book form, and the vaccination records are on the first page. Make sure that they come over here with your new family members--it will save endless trouble with schools, pediatricians, summer camps, etc.
Also FYI, you almost certainly will need to get MMR done for your fiancee as well as any children, because the Russian vaccine is typically only for one of them (forgot whether it was measles or rubella).
Good luck...
