that Alaska is still beautiful and mostly untouched...and that the moose run around and get into everyones way.....hope you both had a wonderful time!!! we really had a blast in Alaska. Before, I thought of Alaska as all ice and eskimos. I never thought that it has a lot to offer. Just imagine 4 to 6 cruise ships docks everyday in Juneau, Alaska's capital city. Title: I knew about.... Hi Stephen and Tess, I'm glad you had a great time!!! Tess, next you're going to tell us Santa wasn't at the North Pole. ;o)) I don't think we're ready to hear that yet. Yes, they have these place called the North Pole but it's on the other side of Alaska (near Fairbanks). And the main tourist attraction is a Santa's house. By the way, congratulations to you and Marife. When is she coming? I have yet to perfect my lumpia....noodles are always to soft or too hard....go figure...I think you can only make lumpia if you are pinay....those rice noodles don't like Poti women. Lori, Secret to good Pancit noodles, is to buy your stuff from an oriental store run by asians... that way you get the "real thing". From watching and eating my ex's pancit for years, my favorite are the "wheat" based noodles, not the rice based ones. (I'll give her a yell to see about the best cooking methods for it). For the best lumpia, having the right wrapper is the most important thing. Filipinos don't normally use the standard egg-roll wrappers which are thick, they use the paper thin type wrappers that are an absolute pain in the rear to separate. I used to spend an hour or two just doing this for my wife, and then she'd coat the inside of this thin wrapper with egg, and roll it together. Because it is such a pain to make, we'd spend half a day making a TON of this stuff, then freeze it. We have this old gray haired Viet Namese lady near here with a little sidewalk cafe who makes the BEST Viet Namese imperial rolls. I can't hardly drive by without pulling in for a few and taking a few home. Lumpia are a lot like those except longer (at least around here.) That's one thing nice about Southern California - if you like Asian food - you can pig out all the time with very authentic versions. Hi Lori! No wonder you’re having trouble with your lumpia. If you’re using rice noodles, then perhaps you are thinking of Pancit? Lumpia is the egg roll looking stuff in a pastry wrapper & usually deep fried. I love them both! The real secret of lumpia is in the sauce you dip it in.
