Hello all,
  My name is Rolf. Lurker for awhile that has just started the pen-pal process.Thanks for all the stories.Everyone here influenced me in one way or another.I have read all of the archives that I could.I just wanted to introduce myself properly,and say thank you for the advice so far and the advice to come.

Thank you Eric.I agree participation is better.I also used to be a Chef.Only a passable one.Not certified.I did not have that extra touch needed to be really good at it.Though I used to make very good Udon and Sukiyaki.I am sure you know this,but just in case,the best pastry cream I have ever tasted was actually a mixture of whipped/pastry  40/60
taste of pastry but not as heavy.I also feel for you if you make your croissants and puff pastry dough by hand :(

Glad to have you here.

I think you'll find the folks here very friendly and helpful.

I am married to a Filipina.  She got here in November, 2000.  I have gone through the process and didn't really have any problems.  I have an IQ of somewhere around 47, so if I can do it....so can you.  (Duhhhhhh).

Anyway, I've got lots of help and information from this board, and I think you'll find it the same.

Thank you Stephen.I must admit from posts here and on other forums the process seems like a hinderance.But from the other posts worth every agonising second.Your a lawyer right?My mother is a paralegal(real estate) and e-mails me funny lawyer stories that float around the office.The last one was a list of what lawyers actually said in a courtroom.:-)
