Oops, sorry I suggested she could be a translator. After re-reading, I realize she is yet to learn English. However, the Latin dentist idea still might work if there are already bi-lingual people in the office.

I would recommend trying this and see how it works for her. Just send her resume to the different places that you have read requiring Spanish language and let them decide if they are interested in contacting her or not. Just help her to write her resumé in the American style (one page at the most) and a cover letter specifying what her English skills are. Someplaces just one someone who can deal with the Spanish speaking community and you leaving in Texas, I imagine she has increasing possibilities of finding a decent office job.

Some times  this whole process seems so slow.  Just try to keep the big picture in mind.  A few years here or there to get her English skills going and get her working won't make much difference in the long term.  Patience is the key.

Just take it day by day and don't rush anything.  

Life is a long time.
