The reason I suggestreading the I-751 immediately after AOS to conditional status is because you need to be aware of the need to create a paper trail. We not only had photo's of us together on vacation, but also having dinner with friends at their house, at our house, and even visiting my folks in NC in the summer when it was warm and again in the winter with coats on. We received a letter back from IRS both years (I made mistakes) with both names and that is probably even better than copies of the return. We collected all that so it was already collected when needed.
I'll post whether we get called for an interview or not.
