If your bring your girl to the states

Can you have a layover in Amsterdam a day or so to check out those museum  Or must they fly directly to the USA ?

You can layover as the K-1 visa is good for I believe up to six month to enter the US from the date issued.  So don't stay in Amsterdam longer than that

w/ their embassy, because an American can go to Europe w/o a visa, but that doesn't mean your fiancee necessarily can. She is still a Russian or Ukrainian citizen and I believe that they do need a visa to travel to Western Europe, even for a day.

I believe you are correct that she would need a transit visa or a tourist visa for the Netherlands.  Shouldn't think that would be difficult since she has the US K-1, and she is with you.

but you can assit in applying for one and you should not have too much difficulty if you are prepared to sponsor the application.
