Chicken Adobo

For anyone interested, here's my own personal secret recipe for Chicken Adobo, developed over the years through trial and error.

Enjoy...

Chicken Adobo

3 lb chicken, cut up
1 C water
2/3 C soy sauce
1/4 C lemon juice
2 TBSP red wine vinegar
1 TBSP garlic, minced
1 TSP ground black pepper
1 TSP ground ginger
4 bay leaves

1 large onion, chopped
2 red bell peppers, cut in strips


Combine first 9 ingredients in large dutch oven and bring to boil on stovetop. Reduce heat, cover, and simmer for one hour.

Add onion and red bell pepper and continue to cook, covered, for 20 minutes or until onion is tender.

Serve with steamed rice.

How small of pieces do you cut the chicken into? Cubes, strips? Thanks for the recipe!

It really doesn't matter how big the chicken pieces are. You can use whole chicken parts but preferably they should fit into the pot so the liquid covers the chicken. It will be so tender that the meat will fall off of the bones anyway.

I cooked a batch yesterday and I used boneless-skinless breasts, cut into about 1-inch cubes, and disjointed wings.

Pork adobo is also good. You can cut up a pork roast or I use boneless loin chops.

A lot of Filipinos like squid adobo, but I prefer to use squid for bait when fishing.  :D

Now this actually sounds really good to me - I haven't had a squid dish yet that I haven't enjoyed!!!

Hey Ray,

I was interested in buying it or at least replicating the the ambiance of Vilma's.  ;D I need to take some pics of the Carinderias that we visit on a regular basis. I especially like the barbecue and food stands in the middle of the boulevard at night. It very exciting when a Bachelor Express Bus blows buy at 100 KPH!  :o
