And how long do you typically go for? I was thinking this because next year I should be able to spend a good 4 weeks travelling, but after that i'll be harder b/c of limited vacation time (switching companies).

Does anyone know if canadians can fly latinas here? From what i've read latinas can't really visit the states easily, but what about canada? How would I go about finding this out?

I understand it to be the opposite.  Easier for Latinas to go to Canada than the US, well legally anyways.

The Canadian consulate would be the place to enquire as to the availability of Canadian visas and the eligibility for them. Your fiancee/girlfriend would be making the application at the consulate in her country.

HINT- do NOT attempt to driver her into the United States. If she is caught, rest assurred that bad things will happen.
